Ingredients
  

For the crust

  • 9 crackers graham crackers about 1 sleeve
  • 4 tablespoons unsalted butter melted

For the cheesecake

  • 12 ounces cream cheese softened to room temperature
  • 1/2 cup granulated sugar
  • 3/4 cup heavy cream
  • 1 teaspoon lemon juice
  • 1/4 cup blackberry preserves

For the topping

  • 1 cup blackberries fresh or thawed frozen
  • 1 tablespoon granulated sugar
  • 2 teaspoons lemon juice
  • Fresh blackberries for garnish

Instructions
 

  • Crush the graham crackers into fine crumbs. Mix with melted butter until combined. Press into the bottom of a 9-inch springform pan. Chill in the fridge while preparing the filling.
  • Beat softened cream cheese, granulated sugar, and lemon juice until smooth and creamy. In a separate bowl, whip heavy cream to soft peaks. Gently fold whipped cream into the cream cheese mixture.
  • Fold in the blackberry preserves gently to create swirls. Do not overmix.
  • Spread the cheesecake filling over the crust. Smooth the top. Cover and refrigerate for at least 6 hours or overnight until firm. Top with sugared blackberries and garnish with fresh blackberries before serving.
