For the crust
- 9 crackers graham crackers about 1 sleeve
- 4 tablespoons unsalted butter melted
For the cheesecake
- 12 ounces cream cheese softened to room temperature
- 1/2 cup granulated sugar
- 3/4 cup heavy cream
- 1 teaspoon lemon juice
- 1/4 cup blackberry preserves
For the topping
- 1 cup blackberries fresh or thawed frozen
- 1 tablespoon granulated sugar
- 2 teaspoons lemon juice
- Fresh blackberries for garnish
Crush the graham crackers into fine crumbs. Mix with melted butter until combined. Press into the bottom of a 9-inch springform pan. Chill in the fridge while preparing the filling.
Beat softened cream cheese, granulated sugar, and lemon juice until smooth and creamy. In a separate bowl, whip heavy cream to soft peaks. Gently fold whipped cream into the cream cheese mixture.
Fold in the blackberry preserves gently to create swirls. Do not overmix.
Spread the cheesecake filling over the crust. Smooth the top. Cover and refrigerate for at least 6 hours or overnight until firm. Top with sugared blackberries and garnish with fresh blackberries before serving.
